Carrot Banana Muffins



Here is a great recipe for muffins that I personally love to grab on my way to work. Check these out and tell me what you think.

 

Carrot Banana Muffins

 

Ingredients:

2 cups almond flour

2 tsp baking soda

1 tsp salt

1 Tbs cinnamon

1 cup dates

3 ripe bananas

3 eggs

1 tsp apple cider vinegar

¼ cup coconut oil, melted

1 ½ cups carrots

¾ c walnuts

 

Instructions:

  1. Preheat oven to 350
  2. In a small bowl, combine almond flour, baking soda, salt and cinnamon.
  3. In a food processor (I use a blender) combine dates, bananas, eggs, vinegar, oil, carrots and walnuts
  4. Add the wet mixture (from step 3) in with dry mixture (from step 2) and stir until completely combined
  5. Spoon into greased muffin tins
  6. Bake at 350 for 25 minutes
